What is Mayonnaise?

In 1756 mayonnaise was made by the French chef. After that many chefs dropped some addition into it. The new creation was born when the chefs realized that there was no cream in the kitchen, the chef switch olive oil for cream and then a new creation was born. And that new creation named Mayonnaise in the honor of the victory of Duc’s.

Some people also called it mayo. Mayonnaise is thicker and creamy in texture. It varies in color such as white, cream, pale yellow. Mayonnaise is made up of numerous ingredients such as oil, egg yolk, lemon juice, vinegar, and olive oil. Mayonnaise is an example of an emulsion process because it is a mixture of two liquids that normally we can not combine like oil and water can’t be mixed together.

The emulsifying process is done by adding. If the emulsifier can’t be added two liquids would separate. In mayonnaise, egg yolk is the emulsifier that contains lecithin. Mayonnaise is assembled by a union of drops of lemon or vinegar with egg yolk. Lecithin emulsifiers hold the ingredients together and put a stop to a separation.

After that oil is added up slowly as the mixture is quickly whisked. Only add more oil rapidly when the sauce begins to thicken.  Such mixers make homemade mayonnaise but it is a little bit tougher to make it at home. If we buy commercially mayonnaise it lasts up to six months in the refrigerator. Mayonnaise which is made up of olive or avocado oil is healthier to eat. However vegan mayonnaise is also there which does not include egg yolks.

What is Cream?

Historically salad cream was mentioned in Victorian sources.  The Commercial product was introduced a century ago. It consists of many ingredients such as oil, water, egg yolk, vinegar, and many more. The texture of the cream is smooth and slightly thicker. Comes in yellow color.

It is also based on emulsion with a low percentage of oil and water and emulsified by egg yolk and acidulated by vinegar. This is used for dressing for salads and sandwiches. The raw egg was not used in salad cream. It is not difficult to make it at home. It is ready in just five steps. In the first step, you have to peel the egg and add lemon juice to it. Also add mustard, sugar, and vinegar and blend all this in the mixer.

In step two make it a smooth blender. In step three add half of the cream into it and blend slowly. In step four mix a little pepper and salt into it. In step five transfer the freshly made salad into a bowl. If consistency is high add a splash of milk into it. While pouring cream into a bowl or jar use a jam funnel to avoid splashes.

Covered flash salad cream in the fridge for three days. We can use salad cream in many ways such as a base for sandwich spread, pizza spread, and for dressing the plate of salad. You can find this cream in any grocery store as well.
